My Blokey is a great, if slightly mad, cook. He comes up with ideas, sometimes daft, but this time it was genius.
Hot cross bun bread and butter pudding
8 hot cross buns
100g chocolate chips
2 tablespoons caster sugar
Pre heat oven to 170℃ (150℃ fan)
Cut the hot cross buns in half, and butter the cut sides. Arrange the bottom halves in the bottom of a square or rectangular buttered baking dish.
Sprinkle with half of the chocolate chips then put the tops of the buns back on.
Mix the eggs and milk and sugar in a jug to make an uncooked custard and pour over the hot cross buns. Sprinkle over the remaining chocolate chips and bake for 30 minutes till the custard is set.
Next time need to not let it stand, push the buns down into the milk then bake straight away.
Also try putting slices at an angle to see if it works better.
Needed much more custard, if you make this double up the custard. This pudding was lovely and very seasonal too. Maybe add some extra dried fruit and raisins in with the chocolate chips.
We don’t really do Easter as we are Atheists but we do go in for the Easter eggs and hot cross buns. I’m not fussed about having a big leg of lamb on Easter Sunday, for me pudding is the boss.
